Actually, you just might be able to do that, but you will have to retain the upstream O2 sensors, to keep the air/fuel mixture just right.
The downstream sensors monitor catallytic converter function, so you may be able to use a simulator for those.
But why do you want to remove the cats?
They're small, but not very restrictive. And you certainly would no longer be able to enjoy that sulphurous exhaust smell we've all come to know and love.
