If I floor it from a stop, when it tries to shift out of 1st, it won't. It'll just bang off the rev-limiter until I left off the gas. I have an '01 R/T by the way. Any ideas?

Does your speedo work? Had a similar problem with my wife's '00 Caravan. It was the speed sensor on the tranny.

I had the fluid changed at 50k miles (like 4k ago) and my friend is the manager at the place that did it, so I can only assume they knew what they were doing and used the right stuff. Before that, my dad was driving the truck so I can't really say that it was doing it before the change as I'm sure he rarely got on it like I do. What tranny fluid should they have used?

If that's an R/T I'd assume it's a 46RE tranny.
Two things comes to my mind that would do that.

1)simplest thing would be the downshift linkage. If it's stuck in the WOT position it may cause it to bounce off the limiter. My bro in laws did when he adjusts it wrong!

2)The governor inside the tranny is either stuck or broken! If that's the case the tranny will have no feedback to the valve body that output shaft is even turning.
For that problem, the tranny needs to be dropped. You MIGHT be able to pull the valve body and see how gummed up it is and maybe do some cleaning. Then try to clean the governor. I can't remember exactly how accesable it is because it's been so long, but I've had to fix them before.

Up above, someone said to do the easiest and most practical attempt by changing the filter and fluid. If you are just changing the fluid and not doing a complete flush of the tc as well, how many quarts are we talking? How about a part number for the Fram tranny filter kit?

If you drop the pan to change the fluid and filter, have someone move the throttle while you watch the cable move a shuttle valve in the throttle body. Make sure it's not sticking.

Then after you get it back together and it still wont upshift, it's probably the governor stuck or one of the springs shot out or something.

I'm actually more familiar with thr CHEVY governor, which one nice thing about the Chevy tranny's is the governor came out the SIDE of the tranny behind a little round cap! takes 5 minutes to remove one of them governors! I'd pull them out, grind the weights a little and dial in my shift points. I'd take one that would upshift into 2nd before 5k RPM's and mod the weights and then it would give me 6K or so. They also had nylon gears that liked to break.
