this is the first time replacing thr thermostat in my Dakota which way does the heat probe go in the housing? does it go toword the engine or the hose? and also why do you have to let the air off the system to get water flow?

The probe goes down. Because air has enter the system and the coolant will not flow properly if you have air pockets in the system.
