I don't know jack about cars but some of what you're saying sounds similar to my 1995 Dodge Dakota v6. I have noticed low mileage (filling up the gas tank more even though I'm probably driving less). SOMETIMES the truck will start shaking like crazy in idle. No problem at all with power, atleast none that I can detect. I had a new catalytic converter / muffler last year so I don't think it's plugged. Now the check engine light is coming on. The codes I got were 3 5 3 5 5 . So I don't think there were any fault codes. Again, I'm a lady who doesn't know anything about fixing my truck. Will get my Dad to replace the O2 sensor and check back to update.
