Has anyone changed out there plenum gasket yet? I can see I have a little oil residue inside my intake so I need to replace the gasket. Is it very hard to do? It doesn't look too hard. Is there a better quality gasket than stock? What about gasket sealant? Any comments on this subject?

A little film of oil is normal. But if you have a film of oil, loose of power climbing a hill, fuel ping, and oil consumption,the gasket is probably bad. Dodge makes an improved kit to replace the gasket. New intake bolts, gaskets, and a new belly pan. A tube of Black Stuff (I think that is its name) can be used around the pan too. When I changed mine, I used a Hughes belly pan. It's 1/4 inch thick aluminum plate that comes with new bolts. Looks stronger than the steel belly pan, might hold better. There is several other posts about this.Check them out. Be sure to change the water bypass hose. If you have any lifter noise, put in a new set now. Good luck.

Just wondering...is it possible to change the belly pan gasket without removing the fuel injectors and rails?

you might want to because it would be a lot easier to take the intake manifold off that way. Just undo the four fuel injector rail bolts and pull up on the whole thing... easy as that.. and no mess because you dont have to remove the injectors from the fuel rail.
