When I start the engine the oil pressure gauge is dead for 5-7 seconds then it just shoots up to the second mark. I took it into the dealer and they said it was the oil pressure gauge sender and they replaced that part. Well guess what? The problem didn't go away. I'm worried that the bearings are being oil starved and run dry for the first 5-7 seconds after start up. This can't be good in the long term. Is this normal or am I being paranoid?

If the ADBV in the filter was no good would this happen? It's a Delco PF-13C. Could it be the pump? I'm considering a high volume pump anyway when the weather gets good for working outside. Any useful thoughts are appreciated.

It's not uncommon for the oil pressure indicator to show 'no pressure' momentarily on startup. The sensor is at the top of the engine, the oil at the bottom, it takes a moment or two for the oil pressure to build.

However, 5-7 seconds seems a little long. Are you noticing any lifter noise? Thats a pretty good indicator, the hydralic lifters will be collapsed and tick like crazy until oil pressure builds up. You may also want to try getting a mechanical gauge and confirming that the pressure is actually low and it's not an insturmentation problem

Have you tried an oil change yet? It is possible there is a problem with the oil filter.
