Hey krytonite
I'm going to be doing a swap also, but not for a while. I got a really nice 360, but there are some things that I want to do with it before it's installed.
A great place to ask for advice is moparchat.com, on the dakota forum. There are a few guys who have actually done the swaps themselves, so they know what they are talking about. Including my mechanic, Bill Thompson who has done several, gen I, gen II and gen III. As far as compatibility, you will need the correct PCM for your truck year (not the new motor year) but V8. Your rad and tranny will have to be upgraded, as well as motor mounts. There could be more, but that is all the info I have for now. I bought a couple of books, I want to work on this motor myself, and I want to do it right so there is no hurry.

97 3.9 CC Sport. Black. Auto 3.55, Quick D Intake, JBA Stainless headers, Autolite 3923s, stainless Borla Turbo XL & tip, V8 TB, FMS 19 lb fuel injectors, 17x10 Boyd Smoothies, JBA 9mm cables, Lakewood chrome traction bars. Have, but not installed: 3.92s, Infinity Sound System

Well, I have the big fat Chrysler manual, and a book called "How to Hot Rod Small Block Mopar Engines" by Larry Shephard. It's supposed to be a really good book, by a guy who is well known in the mopar racing industry. I'm going to read it cover to cover.
I think that whether you have to swap the rear end depends on the truck, or whether you intend to race it (again, I am not 100% sure of this, so you may want to check).
My engine is a 98 magnum 360, throttle body, fuel injected.

Rad, radiator. The V6 one isn't sufficient to cool the bigger engine.
If your truck is a 2000, you will need a new V8 2000 pcm.
I've been told that you can still use the V6 tranny, but it sure won't last long. I'm going to start looking for one when I'm closer to installing the motor.

I think the Ram tranny would work. You'd have to check into driveshaft size and all that stuff. There is another thread "magnum swap" - the guy on that thread just finished a V6-V8 swap. You could ask him what he knows.

A buddy of mine just did a swap... a Cherokee 5.9L into his Jeep TJ. It was a huge job but, it goes real good. If it wasn't all wheel drive, I think he would need wheelee bars :)

I have seen some chatter about that before. From I understand it is quite difficult. First, I think one of the problems is getting the "Hemi" to fit into the confines of the Dak's engine bay. Second I've read is the "Drive By wire" throttle that the 5.7 has. I think the 5.9 was available in the Daks as late as '03 maybe '04. I think that would be the most bang for the buck. But of course, anything is possible if you throw enough money at it. Good Luck on the swap and I hope someone has more info for you than I.
