180 t-stat.... what does it help with, I see everyone has one, but what exactly does it do?

I think the stock t-stat is 195 degrees. By going to 180 the cooling system keeps the engine op. temp lower and thus runs more efficiently. I can't find one here so I ordered mine from speedtweaks yesterday.

I am curious about one more thing with the 180 t-stat. I live in Canada and am curious to know if this will make any difference for me? Will it be affected by the rather cold winter temperatures that we get up here both with and without a windchill??
