I'm not an expert by any means but from what I hear that'll throw a code. Stick with a 180.

If you race the vehicle only, the 160 is the best bet, If you drive vehicle everyday then the 180 is the only temp to use,160 will throw a too cold run Temp.

I have a 2000 R/T, and I tried the 160. I found that it was great until one day it was raining and in the 60's. I was on the freeway and the truck couldn't warm-up after a while I got the "too cold too long" code. I just reset the pcm and it was fine, however I did go with the 180 for optimal performance. Seems that the truck likes to run a little hotter.
