1badkota, its not too hard there are actually a few companies that are making kits to build a 360 into a 408. Check with a machine shop, they will need to bore and change the crank, as well as clearence the block (for the longer stroke)
If you can find a performance shop they should be able to give you an estimate, and do as much, or as little as you want then you finish it yourself. I think you would need larger fuel injectors, to take advantage of the extra cubic inches, as well as a good exhaust.
Good Luck

going from an auto to a manual, seems to be a lot of work, but can be done. I would suggest that you try to locate a wreck that has a manual, there are so many small parts you will need, to complete the project. One good thing though is that Dodge used a hydralic clutch, but you will need a complete system, master cyl. and slave cyl, as well as the hose that conects the two. Dodge didn't make it so you could "bleed" the system either so you will need a good working system to bolt in. A flywheel, clutch assemly, and maybe another drive shaft, or at least a different yoke for the front of the drive shaft. A bell housing will be needed as well. And don't forget, you will need a pilot bearing in the crankshaft.
I think that just about covers it, but I'm sure I probably left out something. Oh yeah, the trans mount is most likely different too.
Good Luck

to add, you probably wouldn't want to bolt up an NV3500 behind a 408. you'll want the NV4500 from a full size Ram. the only thing with that is you'll probably have to modify the driveshaft tunnel extensively or maybe a body lift will help clear that tranny.
