I installed new mopar performance valve covers a month ago and noticed that my oil pressure gauge use to stay around half when I was driving, now it stays 3/4 the way all the time. Any ideas why?

That is one of the little known side effects of installing new covers. Replace the air cleaner with the Mopar one and your gas gauge will stay closer to full.

That is more of a possibilty than merely changing the covers. I think he should look into it to rule it out. Theres one thing I need to ask you CrapShoveler, did you by chance change the oil after changing the valve covers? Because that would give you a slightly higher reading because of the fresh oil.

Possible? yes. Likely? no. Here's why. The bulk (90%) of your oil pressure is based on the condition of the main, rod and cam bearings. Any serious wear on any of those bearings will drop your oil pressure substantially. The other 10% of oil pressure is spread out throughout the motor with the bulk of that oiling the upper half of the motor. It would take a piece of $h!t in main feeding line (after the gauge sensor) to cause a rise in oil pressure reading. And that crud in the main line would starve the motor of oil. Then you'll see a rise in engine temp due to the lack of lubrication. But thats another story.
