 Subject: Size of Tire for a 95' dakota

I have a 1995 Dakota 2wd with a 318. I have had the front end lifted 3inches using Fabtech coils that were cut to fit. Right now on my truck, i'm running stock 215/75 R14's, i'm looking at buying either 30's or 31's. Would that work? I've already been told i need to get a bigger rim, Stock rim is 15x6, i've been told to get atleast a 15x8. I have also been told that i would probably have to take off or nutch the skid plate under the bumper to fit those in there. Would you guys know anything about that?
