I hear that the 05 's have gone with coil overs on the front. Can my 01 be converted to that to eliminate the torsion bars?

If it's 2wd, then most likely yes. There's enough room in there to fit the correct diameter. You'll need to rebuild/reinforce the shock mounts so they can handle the weight of the truck.
The question is, would it be worth it? Unless you're racing, I doubt it.
