SO, on my 2000 Dakota, where is a good spot to place the jack
stands? I need to get under the front and rear of the truck (will do
in two separate occasions) to tighten bolts. Where do I place for
front? for back?

Front - under the frame rails, just aft of the front tires.
The rear - under the differential, just inside the spring mounts.
This should be good gouge, regardless of year and for either two or four wheel drive.
