Currently have 215/75/R15 as posted on the door of my 2001 Dakota 4.7 V8. Tires spin with very little effort when there is any moisture on the road. ride is poor and tends to track any grooves in the road. I want to go to a wider tire on the same rims. Can any one recommend a better size with good traction and ride qualities?

I put Michelin LTX M/S on my '01. 235 75R15. Best tires I ever bought. They cost more than some others but they have been well worth it.

I have the same truck in 4x4. The largest tire you can fit without
rubbing during tight turns is a 31x10.5 R15. I had a set and
loved it. I dropped a size this set , to 30x9.9 R15 and still get a
bit of wheel-spin when I give it the spurs. I'll go back to 31's
next time.

Bridgestone Dueler revo's look great, score well on Tirerack.com
but they're noisy and will wear out in less than 30,000 miles,
trust me.

The above mentioned Michelins are much quieter, will last
atleast 70,000 miles and have very good wet and winter
performance.

The LTX are a really good tire. I have 54,000 miles on mine and still have over half the tread left. I rotate them every other oil change at 6,000 miles. I got a lifetime balance and rotation policy and a 3 year alignment policy if I need it. I keep my truck in perfect alignment and balance and I keep a good eye on the air pressure.

I expect to get another 40 to 50,000 miles out of these tires before I need new ones. They have outlasted by a long shot some of the other cheaper tires I have bought in the past, all while still keeping a really good quiet ride quality with good traction, wet or dry.

The 235/75R15 that Jimmy9190 mentioned would be a good size for your rims. The 31x10.5 R15 that hammerdak recomends were offered stock, but on wider 8" rims. They will look pinched on the narrower rims. Great size, and what I run in the warmer months, but maybe not for your rims.
