I feel stupid asking this, but how do you drain and fill the two (front & rear) differentials, and what are their capacities?

Drain by removing the cover. Fill until the fluid is at the fill hole. IIRC, it was a little more than 1 qt each. Don't forget the additive if you have a clutch type LSD.
For filling the front, I oured the oil in through the vent tube, which is next to the battery on my 2001.
