Subject: Exhaust manifold work

My truck is running like crap and recently on the very forward most bolt on the drivers side, I can see some black "carbon" on the outside of the manifold where it meets the block to the bolt. Should I replace both gaskets? What should I look out for when I remove the manifold? What kind of gasket should I buy and is there any penetrating lube thats better than the others? Thanks!

I know someone has to have some info or tips they can pass along. Also, do I need to torque the bolts on the manifold down to a specific weight?
